However, the amount and quality of chickpea liquid varies between brands, making the outcome less predictable. When the liquid is too thin or reduced, the mousse simply won’t hold.
That inconsistency led me to develop a second approach: replacing egg foam with natural cream cheese. 200 g (7oz) dark chocolate (around 55% cocoa)
1/4 cup (60 ml) natural cream cheese
1 cup (240 ml) cold heavy cream
Optional garnish: whipped cream, chocolate shavings, fresh berries, chocolate-covered coffee beans, or any creative topping you like.
Instructions for Vegetarian Chocolate Mousse with Cream Cheese
These step‑by‑step instructions focus on temperature control and gentle folding, allowing cream cheese to provide structure while keeping the chocolate mousse smooth and balanced.
Step 1: Melt the chocolate
Break the chocolate (200g or 7 oz) into large chunks and place them in a heatproof pan.
Melt it au bain-marie (set the pan over a larger pan with hot water on gentle heat).
Stir occasionally until smooth and glossy.
Optionally add a bit of full fat milk to make it flow easier.
Let it cool slightly, warm but not hot. (If it’s too cool, it will solidify and be hard to mix.)
Step 2: Whip the heavy cream and cream cheese
In a bowl, whip the cold heavy cream (240g or 2 cup) until soft peaks form.
Keep it in the fridge while you prepare the rest.
In a different bowl, whip the cream cheese (60g or 1/4 cup). It won't form soft peaks, but it will make it easier to further process if the cream cheese structure is broken.
Step 3: Fold it all together
Gently fold the melted chocolate into the cream cheese. Best is to use a silicone spatula and make sure the chocolate is completely mixed in before moving on.
Then carefully fold in the whipped heavy cream, one-third at a time, using a soft spatula. The goal is to keep as much air as possible. If you stir too much, the mousse will lose its fluffiness.
Step 4: Chill and serve
Spoon the mousse into serving glasses.
Decorate with your favorite garnish.
Cover and refrigerate for at least 4 hours (or up to 2 days). For the best texture, let it set 6–8 hours.

Be gentle when folding. This is the secret to keeping the mousse light and airy.
Make whipping easier. Use a tall, narrow bowl for the heavy cream—this helps your whisk trap more air.
