1 avocado
1/2 cucumber (the long type)
1 small can edamame beans
1 crispy chicken schnitzel (or make your own, see below)
160g (3/4 cup) sushi rice
1 tablespoon vinegar (Japanese-style if possible)
1 tablespoon honey
1 tablespoon soy sauce
A pinch of roasted sesame seeds and nori sprinkles
Sriracha or another spicy red sauce
How to Make a Crispy Chicken Poké Bowl
Rinse the sushi rice (160g or 3/4 cup) a few times with lukewarm water until the water runs clear. Put the rice in a pot with the edamame beans, then add enough water so it’s covered by about 2 inches (two thumbs).
Bring to a gentle boil and cook on low heat for around 10 minutes, until most of the water has evaporated and the rice is cooked.
Stir in the honey and vinegar, mix well, and let the rice rest with the lid on for about 10 minutes.
