Growing Three Classic Carrot Varieties Through the Season

Growing carrots can be surprisingly rewarding, but not all carrot varieties behave the same way. Differences in growth speed, root shape, harvest window, and storage potential become obvious once you follow multiple cultivars through an entire season. To better understand these differences, we grew three classic carrot varieties from seed tape obtained from Baldur: Amsterdam 2, Nantaise 2, and Rote Riesen 2.


This guide follows the complete growing season of these three carrots in open ground, from sowing and early development to harvest and culinary use. Along the way, we will also examine an important topic that many beginner gardeners encounter: seed tape versus loose carrot seeds, and why seed tape is not always the best option for achieving the highest yields.

Why Compare Multiple Carrot Varieties?

Many gardeners choose a carrot variety based solely on the picture on the seed packet. In reality, different cultivars are bred for very different purposes. Rote Riesen 2

The name Rote Riesen roughly translates to "Red Giant", and the variety lives up to its reputation. While younger roots can be harvested earlier, the variety truly shines when allowed to mature fully. How to Organize a Mixed Carrot Bed

A practical layout consists of several smaller beds instead of one large planting area. One section can be dedicated to very early carrots such as Amsterdam 2 or Mokum F1. These cultivars mature quickly and provide the first crisp, sweet roots of the season, often weeks ahead of larger storage types.


The second section can contain reliable mid-season varieties such as Nantaise 2. These carrots take over as the early harvest begins to decline, maintaining a steady supply of fresh roots through the peak summer months.


The final section should focus on maincrop and storage carrots such as Rote Riesen 2, Flakkée 2, Berlikumer 2, or Autumn King 2. These varieties require patience but reward growers with larger roots, higher yields, and excellent keeping quality.


Extending the Harvest Beyond Autumn

The true advantage of late carrots is not only their later harvest date but also their ability to remain usable long after lifting. When harvested before severe frosts and stored in cool, humid conditions, many storage cultivars maintain good eating quality throughout winter.


As a result, a garden that begins producing fresh carrots in June can continue supplying home-grown roots until November in the ground and for several additional months in storage. Few vegetables offer such a long return from a relatively small growing area.


The Ideal Combination for Most Home Gardens

For gardeners with limited space, a simple combination of Amsterdam 2, Nantaise 2, and Rote Riesen 2 already covers a remarkably wide harvest period. However, growers pursuing the longest possible season may achieve even better results by adding one dedicated early variety such as Mokum F1 and one dedicated storage variety such as Autumn King 2.


By combining very early, early, mid-season, maincrop, and storage carrots, it is possible to create a harvest window that starts in June and continues until November, while stored roots can carry that harvest well into winter. This staggered approach transforms carrots from a single harvest crop into a season-long staple of the kitchen garden.


Seed Tape vs Loose Carrot Seeds

Before discussing the growing season itself, it is important to understand the role of seed tape.


What Is Seed Tape?

Seed tape consists of carrot seeds that are pre-spaced and embedded between two thin layers of biodegradable paper. The gardener simply places the tape in a shallow trench, covers it lightly with soil, and waters thoroughly. In theory, seed tape solves one of the biggest challenges in carrot growing: proper spacing. Rather than sowing hundreds of tiny seeds individually, the spacing is already predetermined by the manufacturer.


Why Seed Tape Is Not Always Optimal

Although seed tape is convenient, it is not necessarily the best approach when aiming for maximum yields. The primary issue is germination efficiency. In practice, a significant portion of the seeds may fail to germinate due to weather, uneven moisture levels, soil conditions, or natural seed variability. When this happens, gaps appear throughout the row. Because the spacing is fixed on the tape, these empty spaces cannot easily be corrected. The result is often an irregular stand of carrots with unused growing space.


Why Loose Seeds Often Perform Better

Loose carrot seeds provide far greater flexibility. Many experienced growers intentionally sow more densely than necessary. Once seedlings emerge, weaker plants are gradually removed. This process allows the gardener to:

  • Select the strongest seedlings.

  • Improve uniformity.

  • Eliminate weak performers early.

  • Optimize root spacing.

When properly managed, this usually produces more consistent harvests than seed tape.


The Importance of Density Control

One of the biggest mistakes in carrot cultivation is allowing seedlings to remain overcrowded. When too many carrots compete for the same space, the roots remain small and often develop irregular shapes. The plants are competing for sunlight, nutrients, water, and underground growing room. The solution is early thinning.

As soon as seedlings become established, weaker plants should be removed. This allows the remaining carrots to develop strong root systems and expand without restriction. Good density control is one of the most important factors influencing final carrot size.


Following the Season

Monitoring multiple carrot varieties throughout the growing season provides valuable insights into germination rates, foliage development, root formation, harvest timing, yield potential, flavor characteristics, and storage performance under the same growing conditions.


Germination Phase

All three varieties were sown directly into prepared garden beds in spring, end of april.

Carrot seedlings emerged slowly compared to many other vegetables. During this period, maintaining consistent moisture proved critical. Even short dry periods can interrupt germination and create uneven rows. Among the three varieties, no major differences were visible during the earliest stages of development. At this point, all seedlings appeared very similar.


Early Vegetative Growth

Once the first true leaves developed, differences began to emerge. Amsterdam 2 established quickly and produced vigorous foliage. The variety displayed the fastest visible development during the first weeks after emergence.


Nantaise 2 followed closely behind with dense, healthy leaf growth. Rote Riesen 2 appeared slightly slower initially, which is common for larger carrots that are bred for extended growing periods.


At this stage, weed competition became one of the most important management considerations. Young carrot seedlings can easily become overwhelmed by aggressive weeds if beds are not kept clean.


Mid-Season Development

By midsummer the personalities of each variety became much clearer.


Amsterdam 2

Amsterdam 2 reached harvestable size first. The roots remained relatively slim but developed excellent color and sweetness. Harvesting could begin while larger varieties were still investing energy into root expansion. For gardeners who value an early harvest, Amsterdam 2 provided the first meaningful crop. While Amsterdam 2 was planted in April, the first carrots were harvested in July.


Nantaise 2

Nantaise 2 demonstrated exceptional uniformity. Most roots matured at a very similar rate and maintained a classic cylindrical shape. The combination of sweetness, texture, and size made this variety particularly versatile. The roots were equally suitable for fresh eating, roasting, soups, and general kitchen use. While Nantaise 2 was also planted in April, the first carrots were harvested in August.


Rote Riesen 2

Rote Riesen 2 focused on root expansion rather than speed. While the variety lagged behind in early harvest potential, individual carrots eventually surpassed the size of the other cultivars. The roots became noticeably thicker and more substantial as the season progressed toward autumn. Similar then the other two breeds, Rote Riesen 2 was planted in April, the first carrots were harvested in September.

Harvest Results

As harvest approaches, differences between carrot varieties become increasingly apparent, with factors such as root size, shape, uniformity, color intensity, texture, sweetness, total yield, and storage potential reflecting each cultivar's unique genetic characteristics and growing performance.


Amsterdam 2 Harvest

Amsterdam 2 produced the earliest harvest of the trial. The roots were crisp, finely textured, and exceptionally sweet. Their smaller size made them ideal for direct consumption straight from the garden. The variety excelled in quality rather than total yield.


Nantaise 2 Harvest

Nantaise 2 offered perhaps the most balanced performance overall. The roots achieved an attractive size while maintaining excellent texture and flavor. Uniformity was impressive, making harvest planning straightforward. For gardeners seeking a dependable all-round carrot, Nantaise 2 proved difficult to fault.


Rote Riesen 2 Harvest

Rote Riesen 2 dominated in size. The largest roots significantly exceeded those of Amsterdam 2 and Nantaise 2. This translated into higher individual root weights and strong storage potential. For autumn harvesting and winter supplies, Rote Riesen 2 was clearly the strongest candidate.


Best Culinary Uses

The culinary value of a carrot extends far beyond its appearance in the garden. Different carrot varieties vary in sweetness, moisture content, texture, core size, and overall root density, all of which influence how they perform in raw preparations, roasting, soups, stews, purees, and long-term storage. Understanding these characteristics allows gardeners and home cooks to match each variety to its ideal culinary application, maximizing both flavor and texture while making the most of the seasonal harvest.

Healthy soil preparation, proper thinning, and realistic plant spacing have a greater impact on root quality than many gardeners realize. A well-managed row of ordinary carrots will almost always outperform a crowded row of premium seed.

By combining early, mid-season, and storage varieties, a relatively small growing area can provide fresh carrots from the first weeks of summer through late autumn, while stored roots continue supplying the kitchen throughout winter. Few vegetables offer such a long harvest window, such reliable yields, and such versatility in cooking. Whether sliced into stir-fries, grated into salads, roasted alongside meats, or incorporated into homemade sushi fillings, carrots remain one of the most productive and rewarding crops a home gardener can grow.


For us, this trial confirmed that the ideal carrot garden is not built around a single variety. It is built around a harvest strategy: selecting complementary cultivars, managing plant density carefully, and planning for continuous production throughout the season. When those elements come together, carrots become far more than a root vegetable; they become a year-round staple of the edible garden.
