You may see recipes described as 65%, 75%, or even 85% hydration and wonder what those numbers actually mean. More importantly, you may wonder how they affect the dough in your hands and the bread that comes out of the oven. In simple terms, hydration is the relationship between the amount of water and flour in your dough. More water creates a wetter dough. Less water creates a firmer dough. That sounds simple, but the effect is much bigger than texture alone. Hydration changes how your dough feels, how it ferments, how easy it is to shape, and what kind of crumb your bread develops.
